Thick Yoghurt Soup

You will need
  • - 1.5 liters of fatty yogurt;
  • - 500 g of minced meat with onions;
  • - 2 bunches of cilantro;
  • - 2 bunches of mint;
  • - 1 bunch of green onions;
  • - 1 bunch of green garlic;
  • - 1/4 cup rice;
  • - 1 egg;
  • - 3 tbsp. spoons of rice flour;
  • - vegetable oil, nutmeg, turmeric, pepper, salt.
Wash the green onions and garlic, mint, cilantro. Chop the greens for the soup smaller. Do not reduce the amount of greens - so the soup turns out much tastier.
Minced meat can be any - chicken, pork, beef, but always with the addition of onions. Additionally, add the nutmeg, turmeric, salt and pepper to the mince. Form small meatballs, fry them until cooked in vegetable oil. Leave aside for the time being, meatballs will be needed later.
Beat the egg with a mixer until the volume doubles, add the indicated amount of fatty yogurt, pour in 1 liter of plain water, whisk everything thoroughly. Add rice flour, rice, and continue to beat. Salt to taste.
Place the saucepan with the yogurt mass on medium heat, cook until rice is ready (about 20-30 minutes, stirring with a wooden spoon (along the bottom of the saucepan in one direction!).
Add all the greens to the pan, let boil, cook for 3 minutes until the greens are soft. The soup will immediately acquire a pleasant aroma.
Serve thick yoghurt soup hot by adding fried meatballs or serving them separately to the soup. This soup is not stored for a long time, do not cook it with a reserve.
