1 tbsp. crushed red pepper
- Thinly slice part of 1 lemongrass stalk to yield 1 tablespoon; set aside. Smash remaining lemongrass stalks. In a large pot over medium-high heat, bring broth, smashed lemongrass stalks, ginger, chopped carrots, onion, and cilantro sprigs to a boil. Reduce heat and simmer for 25 minutes. Strain broth and return to pot. Discard solids.
- Over medium heat, return broth to a simmer. Add snow peas, remaining carrots, and sliced lemongrass; cook for 2 minutes. Add shrimp; cook for 3 minutes. Add capellini; cook, stirring, for 2 minutes. Garnish with cilantro leaves and crushed red pepper.
